Auspicious Imperial Broth
MARIGOLD Evaporated Filled Milk (390g)

Auspicious Imperial Broth

Ingredients

  • 1.2kg chicken carcass, blanched

  • 2 tbsp (30gm) white peppercorn

  • 25 pcs (60gm) Chinese herb “Solomon’s Seal” (Yuk Chuk)

  • 10 pcs (40 gm) red dates

  • 800gm sengkuang, cubed 

  • 1/2 Chinese cabbage (400gm)

  • 5 litres water

  • 1¼ tbsp salt

  • 1¼ tbsp white pepper

  • 1 can MARIGOLD Evaporated Filled Milk

  • 1 tbsp (20gm) peanuts, boiled

  • 1 tbsp (20gm) black-eyed peas, boiled

  • 1 tbsp (20gm) Chinese barley, boiled

  • 1 tbsp (20gm) black beans, boiled

  • 1 tsp (3gm) goji berries


Method

  1. Place chicken carcass, white peppercorn, cabbage, “Solomon’s Seal”, red dates and sengkuang into a stock pot.

  2. Add water and bring to a boil. Simmer for at least 4 hours.

  3. Pour the broth through a strainer and discard the strained items. Pour broth back into the pot. Add peanuts, black-eyed peas, Chinese barley, black beans and goji berries. Season to taste with salt and pepper. Add MARIGOLD Evaporated Filled Milk and bring to a boil.

  4. Pour finished broth into the steamboat pot.


Chef's Tip:

Chicken feet can be used instead of chicken carcass as it contains collagen which gives the broth a richer mouth feel.

Scarlet Treasure Broth

Ingredients

Ingredients for broth base:

  • 1½ cups oil

  • 30 pcs (500gm) prawn

  • 3 tbsp chilli powder

  • 1.2kg red snapper

  • 6 pcs (700gm) tomatoes

  • 3 stalks (100gm) spring onions

  • 20 pcs red chili padi

  • 8 pcs red chili

  • 5 pcs (700gm) yellow onion

  • 2-inch (300gm) ginger

  • 1 cup (200gm) garlic

    • 6 litres water

Ingredients for Scarlet Treasure Broth:

  • 5 litres broth base

  • 2 cups (300gm) light soy sauce

  • 3/4-inch (100gm) ginger

  • 6 tbsp (90gm) salted vegetables, sliced

  • 2 pcs (20gm) preserved plum

  • 1 tbsp coriander, chopped

  • 2 tsp white pepper

  • 1 can MARIGOLD Evaporated Filled Milk


Method

Method for broth base:

  1. Pour oil into a pot. When it’s heated, sauté prawns with chili powder till fragrant. Add remaining ingredients except water and cook for another 5 minutes.

  2. Add water and bring to a boil. Simmer for 2½ hours. Pour the broth through a strainer and discard the strained items.


Method for Scarlet Treasure Broth:

  1. Add all ingredients into the pot except MARIGOLD Evaporated Filled Milk. Bring to a boil and simmer for 3 minutes.

  2. Add MARIGOLD Evaporated Filled Milk.

  3. Pour finished broth into the steamboat pot.


Chef's Tip:

Golden snapper can be used to replace red snapper.
